Since the summer of my sixth-grade year, when it came to using tampons, I’ve always been a box a month kind of girl. Because for me, tampons were a means to an end when it came to my feminine health each month. In fact, my grandmother initially discussed the use of tampons with me as if they were a wearable badge of honor. Those small, gleaming white spirit sticks became the official mascot of my high school years.

That many tampons are derived from genetically-modified cotton and contain a smorgasbord of chemicals including cotton crop pesticides, odor neutralizers, artificial fragrances, synthetic dyes, polyester, adhesives, polyethylene, polypropylene, and propylene glycol, contaminants linked to hormone disruption, cancer, birth defects, and infertility.

I say all that to say this: The DivaCup® changed the way I view my adult life as a menstruating woman. I am a better steward of my home, my body, and my environment for being a DivaCup® user! So now that I’ve shared my favorite zero-waste product at home, I also want to share with you a few other tips I’ve found to radically revolutionize my period at home.

Carve out time to rest: The first day of my period brings with it an overwhelming desire for peace and rest. I listen to my body. I don’t pressure myself to carry on as usual. To keep up with my usual tasks, to plaster on a smile on my face and pretend my body isn’t cramping beyond belief. I use the week of my cycle as a sacred pause. Rather than fighting my period, I allow myself a few hours each afternoon of my period for nothing but a nap. I consider it my body’s way of resetting its clock each month.

Stock-up for Success: As I mentioned above, knowing the facts about eco-friendly femcare products is key to having a zero-waste period at home each month. As was switching from pads and tampons to a reusable menstrual cup! It goes without saying that  I make sure in the days leading up to the start of my cycle each month that my DivaCup® is accessible in my bathroom, I am stocked-up on DivaWash, and I have a stack of fresh, clean, organic towels and bath products ready to use each month. I start this recipe by washing, peeling, and coring my apples. The scraps from the apples can be used to make DIY Apple Cider Vinegar, dehydrated to make pet treats, or composted!

Much like other chia seed jam recipes, you’ll cook down the fruit along with chia seeds and any desired spices. I sweetened this recipe with 100% apple juice and stevia to give it a little extra fall apple kick. It tasted amazing. I opted to use my pressure cooker, on a 10-minute setting, but feel free to use your stove top instead. I made a fairly small batch the first time I made it, but it disappeared quickly! And by disappeared quickly I mean that I ate the whole batch in less than 12 hours. Can you blame me? I was on my period, after all! 

After cooking the apples down the apples and cooling them for about 20 minutes, they will be nice and soft and the jam base will have thickened up nicely thanks to those awesome little chia seeds. to finish the jam, I took a silicone spatula and mashed half of the apple mixture to get a nice, thick consistency. You can mash all of it if you want, but I liked leaving lots of apple chunks for texture. That’s my jam!

Make the chia seed overnight oats was just as easy! Just whisk together to combine the oats, chia seeds, almond milk, vanilla, and cinnamon in a small bowl. Place in the fridge overnight to thicken. The oats are ready when all the liquid has been absorbed and the oats are soft. You can adjust your overnight oats as well. You can thin it out with more milk or thicken it with more chia seeds, as needed.

To assemble my DIY Apple Pie Pecan Overnight Chia Seed Pudding, simply layer the vegan overnight oats with the apple pie jam, a few spoonfuls to each per layer. Add your chopped pecans and walnuts on top of each layer, if desired. Garnish with a cinnamon stick, and you’re ready! This recipe will be your new period-ready go-to! Apple Pie Walnut Chia Seed Pudding

Ingredients
  1. 3 large apples, peeled and diced
  2. 3/4 cup 100% organic apple juice
  3. 4 tablespoons chia seeds
  4. 2 teaspoons cinnamon
  5. 1 cinnamon stick, for garnish
  6. 1 teaspoon pure vanilla extract
  7. Pinch of sea salt
  8. 1/2 cup gluten-free organic rolled oats
  9. 1 1/4 cups almond milk
  10. 1/4 teaspoon stevia
  11. 1/4 cup chopped walnuts
Instructions
  1. To make the jam: Add all jam ingredients into a medium pot or pressure cooker. Stir to combine.
  2. Reduce heat to medium-low and simmer for 15 minutes. Stirring every 5 minutes.
  3. When the apples are fork tender, remove from heat and mash 50% of the mixture to thicken the blend.
  4. Set aside to cool.
  5. To make the overnight oats: Combine the oats, chia seeds, almond milk, vanilla, and cinnamon in a small bowl. Whisk to combine.
  6. Add to a mason jar and chill overnight.
  7. Place in the fridge overnight.
  8. To make the parfait: Layer the overnight oats with the apple pie jam, in a mason jar.
  9. Each layer should be a few spoonfuls.
  10. Add your chopped walnuts on top of each layer, if desired.
  11. Garnish with a cinnamon stick.
  12. Serve chilled.
Notes
  1. You can store your leftover jam in an air-tight container jar in the fridge. The jam will last for 2 weeks. The chia oats blend will last 1 week. Enjoy!

Monday Meal Plan (08/27-09/03/17) & Chocolate Chip Peanut Butter Chia Seed Pudding Recipe

Happy Monday, everyone! This week is starting off to a dreary start here in Dixie! But what better way to start the school year off right than a zero-waste meal plan and breakfasts decadent enough to be desserts! Keep in mind, this week’s menu will again reflect my family eating, shopping, and meal planning from our pantry and freezers. Lunches will once again be packed bento box-style. Most breakfasts will consist of make-ahead mason-jar style meals and several dinners will include farmer’s market produce or blanched freezer veggies.

The total out-of-pocket cost for this week’s meal plan for my family of three was $27.31.

Here’s what we will be having this week:

Monday
Breakfast: Chocolate Chip Peanut Butter Chia Seed Pudding.
Lunch: Olive spread with crackers, grapes, and almond milk. 
Snack: Strawberries and String Cheese.
Dinner: Spicy Thai Noodles and Sunbutter Sauce, steamed broccoli, and Stevia Lemonade.
Dessert: Strawberry, stevia, and almond milk smoothies.

Tuesday
Breakfast: Chocolate Chip Peanut Butter Chia Seed Pudding.
Lunch: Olive spread with crackers, grapes, and almond milk.
Snack: Grapes and String Cheese.
Dinner: Mexican Jar Salad and Stevia Lemonade.
Dessert: Strawberry, organic cocoa, and almond milk smoothies.

Wednesday
Breakfast: Chocolate Chip Peanut Butter Chia Seed Pudding.
Lunch: Grilled cheese sliders, grapes, and ice water.
Snack: Strawberries and String Cheese.
Dinner: Deconstructed Sushi Salad and Stevia Lemonade.

Lunch: Grilled Go-Veggie Pear, Basil, and Cheese Sandwiches, grapes, and almond milk.
Snack: Strawberries and String Cheese.
Dinner: Orzo Salad with olives and cucumbers and Stevia Lemonade.
Dessert: Strawberry, organic cocoa, and almond milk smoothies.

Now for the fun part! This week for breakfast we will be enjoying make-ahead Chocolate Chip Peanut Butter Chia Seed Pudding! I love chia seeds and use them all the time in cooking at home. Chia seeds are like little mini workhorses which pack more calcium than milk, more antioxidants than blueberries, and more Omega-3 than Salmon. The best part? Chia Seeds have a natural ability to soak up liquids and gel that they lend themselves to many sweet and breakfast recipes, such as Chia Seed Pudding!

This is such a super simple recipe that it literally takes under four minutes to make. I finish the pudding with strained Greek yogurt and mini chocolate chips for a little extra sweetness! You could also add extra berries, nuts, bananas, or dried fruit you have around your kitchen too!

To make my recipe I used fresh organic 2% milk from Organic Valley. This milk is ultra creamy, lower in fat, and makes this healthy recipe cold, rich, and delicious! Chia seed pudding is a simple and delicious way to easily get the benefits of chia seeds and could be put in reused baby food jars, small mason jars or even squeeze pouches to be included for school lunches. The possibilities are endless.

Serves 4
Delicious chia seed pudding packed with protein, Omega-3, antioxidants, calcium, and heart-healthy oils that you can make in under 4 minute flat!

Ingredients
  1. 2 cups Organic Valley 2% Milk
  2. 2 tablespoons organic peanut butter powder
  3. 2 tablespoons mini chocolate chips
  4. 8 tablespoons Greek Yogurt
  5. 1/2 cup Chia Seeds
  6. 1/2 teaspoon vanilla extract
  7. 1/4 cup organic pure maple syrup
  8. 1/4 teaspoon cinnamon powder
  9. 1/4 teaspoon organic cocoa powder
Instructions
  1. Blend all ingredients except chia seeds, chocolate chips, and yogurt in a blender until smooth.
  2. Whisk in chia seeds.
  3. Pour 1/4 of mixture into each of 4 mason clean jelly jars
  4. Place in the refrigerator overnight to let pudding gel.
  5. Stir the pudding a few times within the first hour to help it gel evenly.
  6. When ready to serve, garnish each jelly jar of pudding with 2 tablespoons of Greek yogurt and 1/2 tablespoons of chocolate chips on each jar.
  7. Serve cold.

  1. Each pudding jar will last up to one week in the fridge. Enjoy!

Knock Your Socks Off Vegan Peanut Butter Cookies

Last week was a whirlwind for me. From prepping for the back-to-school season, getting ahead on blog posts, and trying to find ways to carve out more time for self-care at home, it’s been a mess. Despite all the work I’ve put in this past week, I’ve had a real nagging feeling in the back of my mind. A hankering for peanut butter cookies. A strange choice considering we didn’t have normally keep peanut butter cookies on hand, the fact that baking in the middle of the summer is nuts, and that I’m currently on a 28-day Personal Trainer food meal plan. As is life.

To satiate my cookie craving I quickly concocted a plan to maintain my current meal plan and my sweet tooth alike. I’d bake cookies, eat just one (maybe two), and then freeze the rest of the batch for my family this fall. The best part? I had everything I needed on hand to make cookies! You have to love a well-stocked pantry, am I right?

The only hitch? I wanted to make sure these cookies were somewhat healthy in nature. Because over the last several weeks, I’ve been trying to make at least the majority of my weekday meals vegan. I’ve noticed that I feel more clear-headed and full of energy when I do, so I’ve worked to make it a liveable habit.

Luckily, peanut butter cookies are a cinch to make vegan. With a few tweaks, mind you. I subbed oat flour for white flour to make sure my cookies were vegan and gluten-free. While with any baking, vegan or otherwise, the bottom line is taste. To that end, I promise you these cookies will knock the socks off even the pickiest of peanut butter lovers. Like socks on the floor, cookie crumbs galore, and you could care less about cleaning those crumbs up kind of good.  I’ll let you savor that image for a moment.

These cookies are the softest and most tender peanut butter cookies I’ve ever tasted. The use of organic coconut sugar gives them a warm caramel layer to their base that’s so good. These vegan and gluten-free cookies are every bit as decadent as their traditional counterparts! Just without yucky things like processed flour and GMO-laden junk. These vegan cookies have a melt-in-your-mouth goodness, and pair amazingly with, you guessed it, a tall, cold glass of plant-based milk.

Did I also mention that these cookies are nut-free peanut butter cookies? Yup, you read that correctly. I used No-Nut Butter by The Sneaky Chef in my mix! While we are not a nut-free family, my husband teaches many students who are. Ingredients

  • 3/4 cup gluten free oat flour*
  • 1 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 1 cup Sneaky Chef peanut butter
  • 1 cup brown sugar
  • 2 teaspoons pure vanilla extract
  • 1/4 cup So Delicious unsweetened coconut milk

Instructions

  1. Preheat oven to 350 degrees. Prepare baking sheets by lining with parchment paper.
  2. Sift together oat flour, baking soda and salt. Set aside.
  3. In large mixing bowl of stand mixer, cream together peanut butter and brown sugar for 1-2 minutes. Add vanilla and beat until combined.
  4. While mixer is on low, slowly add oat mixture. Mix until dough becomes crumbly. Add coconut milk and mix until just combined.
  5. Roll heaping tablespoon-size scoops on cookie dough into balls. Place dough onto baking sheet and flatten by pressing with tongs of fork, creating crisscross pattern.
  6. Bake cookies 8-10 minutes until golden brown. Allow to cool on pan for 2-3 minutes before placing on cooling rack to cool completely.
  7. Store in airtight container or freeze double wrapped in parchment paper for up to one year.

Ingredients
  1. 2 pouches (2.6 oz.) StarKist Tuna Creations® BOLD Jalapeno
  2. 2 ounces unflavored Greek Yogurt
  3. Salt and freshly ground black pepper to taste
  4. 1 pinch jerk seasoning
  5. 1 teaspoon chopped mint
  6. 2 tablespoons chopped mango
  7. 3 tablespoons seeded, peeled, & chopped cucumbers
  8. 2 flatbread wraps
  9. 2 tablespoons minced cilantro
  10. 1 half seed jalapeno
  11. Squeeze of lemon
Instructions
  1. Mix all ingredients together.
  2. Place wrap on plate.
  3. Add sliced jalapenos on wrap.
  4. Distribute tuna mixture evenly over the entire wrap.
  5. Top with additional cilantro, as desired.
  6. Wrap end together and cut on bias to create two halves.
  7. Serve and enjoy!

It’s not just a time for families and friends to come together for a barbecue and enjoy the first long weekend of the season, it’s also a time for my family to honor the man I admire most in this world, my husband Daniel.

You see, my husband Daniel has worn many hats in his life, including a son, student, musician, educator, husband, father to many, but most importantly, veteran and former Sergeant in the United States Army. So it goes without saying that as a family, we always take time each Memorial Day to reflect on how blessed we are to not only be able to get together with our loved ones on that beautiful spring day but that our soldier came home to be able to share in these glorious days of summer.

Did you know that Memorial Day originated from Decoration Day, a day when people honored soldiers who died in the Civil War by placing flowers on the graves of memorial park headstones but was later expanded to all the men and women who have died in military service after World War I? Making Memorial Day one of the longest-celebrated federal holidays in American history.

As a family, we chose to remember the significance of the day, as well as to honor my husband, veterans, active servicemen, women, and the fallen, in a myriad of ways. We do this first, by flying our American flag in front of our home. Did you know, according to flag etiquette, the flag should be raised at half-staff from sunrise until noon and then on full-staff for the rest of the day. Before noon, with the flag at half-staff, we remember those who died in wars; in the afternoon we praise the living veterans and those who continue fighting for liberty and justice for all.

We also honor our soldiers by thanking any and all veterans we know for their service while visiting our local WWI Doughboy Memorial and attending our local Memorial Day parade. We also make a point of keeping our military history alive by asking my husband to recount his days of service and by observing the National Moment of Remembrance, where we pause for one minute at 3:00 p.m. (local time) each Memorial Day, to remember and reflect on the sacrifices made by many to ensure American freedoms.

May is also Military Appreciation Month. So another way we appreciate our soldier’s military service is by giving back to military service projects. One of our favorite military charities is that of the United Service Organizations Inc., the USO, a nonprofit organization that provides programs, services, and live entertainment to United States service members and their families. The USO strengthens America’s military service members by keeping them connected to family, home, and country, throughout their service to the nation.

My husband is nothing if not a connoisseur of all things smoked and grilled. So today I’d love to continue to honor my soldier’s love of the flame by sharing his famous Smoked Curried Cajun Ribs recipe. These ribs are always a crowd-pleaser!

Start with a clean slate:

My husband always starts each smoking session by thoroughly cleaning his electric smoker by pressure washing the inside of the main barrel the night before cooking and allowing it to air dry overnight.

Marination is key:

The night before cooking he also makes sure to prep his ribs. He does this by first removing any excess membranes from the underside of each slab of ribs. He then marinates his ribs in a simple blend of fresh garlic, ginger, spices, and one 12-ounce can of Coca-Cola. He then adds the ribs to a glass bowl, drenches the ribs in the marinade, covers the bowl with plastic wrap, and refrigerates the ribs overnight.

Prep for success:

The next morning, an hour before he intends to start smoking, my husband starts the day by assembling the smoker and setting the external thermostat to 200 degrees Fahrenheit; you’re looking for a low and slow cooking process. For added flavor, Daniel uses Coca-Cola-soaked hickory chips (that have been soaked for up to one hour) in his internal smoking boxes. Filling each box completely before placing each box inside the smoker’s furthest bottom compartment. The Coca-Cola gives the chips a deeper, sweeter flavor.

Remember, while smoking ribs be sure to replenish your wood chips hourly while smoking to ensure even heat and consistent smoke. Then while the smoker is coming to temperature and the chips are soaking, he finishes prepping his ribs inside.

A quick tip: adding an additional 12-ounce can of Coca-Cola to the internal smoking infusion bowl, as well as the remaining rib marinade, will help to keep even moisture in your ribs while smoking.

Give it a rub:

My husband is a Memphis-style rib man, so he likes to add a rub mixture to his ribs before smoking. So after removing the ribs from the fridge, and allowing them to come to temperature on the counter for ten minutes, he pulls the ribs from their marinade bath, patting down each slab to remove excess moisture with a paper towel, and then rubs each slab with Cajun mustard.

He finishes seasoning the ribs by coating each side of his slabs with his DIY curry rub blend; the mustard acts as both a moisture barrier and helps the curry rub stick to the ribs. He then lets the ribs rest on a cutting board for ten minutes. He then adds the ribs to the smoker and smokes them for six hours.

Make the most of your downtime:

While the ribs are a low and slow cooking process, they do require an hourly inspection. So while the ribs are smoking my husband loves to sit on our patio playing with the kiddo and pets, or one of his favorite hobbies, juggling; he’s pretty adept at most forms of juggling including balls, rings, and clubs. It’s a great way to pass a lazy summer afternoon away while grilling out and smoking food for friends and family.

Check your ribs hourly:

Here you can see the overall progress of the ribs smoking at thirty-minute segments for a total of six-hours-you’ll know your ribs are done when they reach an internal temperature of 203 degrees Fahrenheit and have a visible smoke ring around the entire perimeter of each rib slab.

7) Enjoy your smoky success:

When your ribs are finished, remove them from your smoker and let them rest an additional ten minutes on a cutting board before cutting into each slab.

To finish this dish, I added sides of curried carrot and snap pea salad, fresh lemon wedges, lemon pepper couscous, and of course, an ice-cold can of Coca-Cola!

These ribs are amazing, and affordable, and make the perfect pairing with the USO Coca-Cola 35-count packs which can be found in-club from Sam’s Club. Even better, this recipe can be made ahead of time, refrigerated, and reheated in an oven or toaster oven at 350 degrees Ferenheight for 10 minutes, served immediately.

Daniel’s Memorial Day Ribs Recipe

Ingredients

  • 6-pound bone-in pork ribs
  • 3 cups Coca-Cola soda
  • 1 cup Flavor God dry ketchup seasoning
  • 1 cup packed dark brown sugar
  • 6 tablespoons chili powder
  • 4 tablespoons ground black pepper
  • 2 tablespoons dry mustard
  • 2 tablespoons dry curry powder
  • 1 tablespoon ground cinnamon
  • 1 tablespoon Kosher salt
  • 1 tablespoon garlic powder
  • 1 teaspoon cajun seasoning
  • 1/2 teaspoon white pepper
  • 1/2 teaspoon sweet smoked paprika
  • 1/4 teaspoon marjoram

Directions

  1. Place the ribs into a large baking dish.
  2. Pour 2 cups of Coca-Cola over them. Reserving one-third cup of the soda for a sauce to be made later. Cover the pan securely with plastic wrap and let the ribs marinate in the fridge overnight.
  3. Pour the remaining 1 cup of soda into a blender or food processor and add the ketchup seasoning, brown sugar, chili powder, pepper, dry mustard, cinnamon, and dry curry powder. Blend until smooth.
  4. Put the ribs in a roasting pan that has been coated with cooking spray, brush liberally with part of the sauce, cover the pan with a lid, and refrigerate for one hour.
  5. Add the ribs to the smoker. Smoking for six hours-checking every two hours. The initial temperature of the smoker should be 225 degrees Fahrenheit, cooking the ribs, until tender.
  6. To finish, pull the ribs out of the smoker, selling aside for 10-15 minutes. Serve with vegetables and cous cous.

Reuben-Style Corned Beef Casserole

 

If you are anything like me, then you probably have an inordinate amount of yummy, savory, delicious leftover Saint Patrick’s Day corned beef brisket in your fridge. So with all things corned beef fresh on the mind,  I wanted to share with you all my recipe for Reuben-Style Corned Beef Casserole.  This recipe features corned beef leftovers, rye bread, sauerkraut, and loads of swiss cheese! This recipe is part deli classic and savory delight. A recipe sure to be one of your new family favorites. 

 

 

I love to serve this dish after Saint Patrick’s Day alongside a simple salad. It’s so good and so warming during the later days of Winter each year. This will be a recipe you’ll want to keep on-hand as you could easily substitute a myriad of meat options and exchange Russian dressing for your dressing choice as well, making this meal truly customizable. So here’s how to make Reuben-Style Corned Beef Casserole:

Ingredients
  1. 6 slices rye bread, cubed
  2. 1 (16 ounce) can sauerkraut, drained and rinsed
  3. 1 lb deli sliced corned beef, cut into strips
  4. 3/4 cup Russian salad dressing; French or Thousand Island Dressing can be substituted.
  5. 2 cups shredded Swiss cheese
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Cube rye bread.
  3. Spread bread cubes in the bottom of a 9×13 inch baking dish.
  4. Spread sauerkraut evenly over the bread cubes, then layer beef strips over sauerkraut.
  5. Pour dressing over the entire casserole.
  6. Spray aluminum foil with cooking spray, then take the foil and cover your baking dish; the foil that has been sprayed should be placed sprayed side down.
  7. Bake for 20 minutes.
  8. Remove pan from oven.
  9. Remove foil and top with cheese, then return the casserole to the oven to brown for an additional 10 minutes.

  1. Quick tip: This casserole also freezes well for up to six months. Enjoy!

Pi Day Strawberry Pie Recipe

Happy Pi Day, everyone! Today I wanted to post about what Pi is for those who may not know, and for the kiddos at home on Spring break!

Pi Day falls on Mar. 14 (3/14) wherein some parts of the world, people celebrate the never-ending mathematical constant: Pi (Greek letter “π”). While National Pi Day did not become official until 2009, when the U.S. House of Representatives passed a resolution to the effect, the day was celebrated since 1988 by physicist Larry Shaw, at the San Francisco Exploratorium. Shaw and his colleagues celebrated the day consuming fruit pies.

Here are a few Pi Day Facts:

  • What is Pi? It’s a symbol used in math to represent a constant — the ratio of the circumference of a circle to its diameter, approximately 3.14159.
  • Pi is considered to be an irrational and transcendental number, which means it will continue infinitely without repetition or pattern.
  • In 1706, William Jones made it popular to use the Greek letter pi to represent the mathematical constant of 3.14. Incidentally, Pi is the 16th letter in the Greek alphabet and “P” is the 16th letter in the English alphabet.
  • The value of Pi has been calculated to over more than two trillion digits, beyond its decimal point.
  • William Shanks, in 1882, is said to have calculated the first 707 digits of Pi. Unfortunately, he made a mistake after the 527th place and as such, every other calculation after that was incorrect. Chemistry student Chao Lu, meanwhile, set the world record in 2005 by memorizing the first 67,890 digits of pi. Chao reportedly practiced for four years and it took 24 hours and 4 min to accomplish the feat.
  • Albert Einstein was born on Pi Day: March 14, 1879.
  • Mankind has studied pi for over 4,000 years, dating back to 2000 B.C. when the ancient Babylonians determined that the circle ratio constant was 3-1/8 or 3.125.
  • The ancient Egyptians computed a value that was a little different at 3-1/7 or 3.143. That said, the earliest written record of pi is on the Rhind Papyrus by Ahmes (c. 1650 BC), an Egyptian scribe.

Ingredients

  • 1 pastry shell (9 inches), unbaked
  • 3/4 cup sugar
  • 2 tablespoons cornstarch
  • 1 cup water
  • 1 package (3 ounces) strawberry gelatin
  • 4 cups sliced fresh strawberries
  • Whipped cream, optional

Instructions

  1. Start by bring sugar, water and cornstarch to a boil over medium heat; approximately seven minutes.
  2. Cook, while stirring the mixture constantly for 1 minute until thickened.
  3. Add package of strawberry gelatin, and fold into mixture until dissolved.
  4. Remove from heat; chill mixture two hours in the refrigerator, on the potholder, for 2 hours.5. Arrange strawberries in a pastry shell and pour gelatin mixture over; reserve six berries, but on the bias for topping.
  5. Cover pie and chill 2-4 hours, again in the refrigerator.
  6. Serve pie with whipped cream if desired.
  7. Enjoy!
