Fall Cookie & Dessert Share-Fest: Spooktacular Boo-Berry Halloween Muffins!

 

Good morning, savvy savers! As I have shared last week, I will be incorporating my Merry Monday Cookie and Share-Fest posts, into my month-long Halloween Fall Post Series! Please note, stating with next week’s Merry Monday Linky Party, there will be an iLinz link-up so you will be able to share you best holiday fare as well! This week I am sharing one of my families favorites, my recipe for a truly spooktacular Halloween Breakfast treat, my healthy, low-amylose-friendly Boo- Berry Breakfast Muffins:

 

 

Ingredients:

1 1/2 cups all-purpose, gluten-free coconut flour
3/4 cup Truvia Baking Blend
1/2 teaspoon kosher salt
2 teaspoons baking powder
1/3 cup coconut oil
1 large organic egg
1/3 cup unsweetened vanilla almond milk
1 1/2 teaspoons vanilla extract
1 Teaspoon dried orange bits
1 cup blueberries

 

Instructions:

1) Heat oven to 400 degrees

2) Next, combine flour, 3/4 cup of the Truvia, baking powder and the salt in a large bowl with a whisk. Whisk at least 10 times to make sure the baking powder and salt have evenly dispersed.

3) Add vegetable oil to a measuring glass.

4) Add the egg to the measuring glass, and incorporate; while incorporating add your vanilla extract.

5) Add milk mixture to the bowl with flour and sugar then use a fork to combine. Do not over mix.

6) Fold in your berries and orange bits.

7) Divide batter between 12 muffin cups. As I am using silicone, you will not need to use liners (unless giving to others), or add water to the bottom of your muffins.

8) Bake muffins 15 minutes or until tops are no longer wet and a toothpick inserted into the middle of a muffin comes out with crumbs, not wet batter.

9) Once done, tip your Cupcake Molds on its side, and your muffins will simply fall out!

10) Transfer muffins to a cooling rack and cool completely.

11) To store muffins, place them in a plastic bag, seal, and store at room temperature for up to 2 to 3 days, or freeze tightly wrapped for up to 3 months.

 

These muffins, adorned with cute black and orange pieces, are full of healthy omega-3’s, fiber, and protein! These muffins are the best! Stay tuned to next week for another healthy dessert option! Also, be sure to check out the recipes the other hosts will be posting, here! Enjoy!

 

DIY Pencil Pouches, In-Binder Supply Pouches, & Student ID Cases!

Hello again, savvy savers! Today finds us with another awesome DIY project just in time for back-to-school savings! If you were anything like me as a child, you always needed a pencil pouch, supply case, and student ID bag; all needed to make sure that our schedules, Lisa Frank pencils, push-through lead insert-able pencils, scented Mr. Sketch markers, and the illicit ultra-cool, but highly impracticable pencil top erasers handy!

So for this weeks Throwback Thursdays (which will also incorporate my weekly Thrifty Thursday post as well) series post, I will be showing you how to make DIY Pencil Pouches, In-Binder Supply Pouches, and Student ID Cases; also note that for the Student ID cases, you could also use these pouches for Epi-pen pouches, a pouch with business cards letting teachers and school personal know about food allergies, or feminine case products for young women! Also worth noting, be sure to check the Scotch website for everyday coupons on duct tape, colored tape, and the like; I purchased my rolls of Duct Tape, the day after Christmas for the past two years, at CVS with coupons, for only $0.10 per roll! I also purchase my baggies, with coupon at the Dollar Tree, making this project $0.15 per bag, on average!

So, to begin you will need the following:

  • Scissors or Cutting Board
  • Ziplock bags; quart size for Pencil Pouches and Student ID & Gallon Bag for In-Binder School Supply Pouch
  • 3-Ring Hole Punch
  • Customized Duct Tape
  • Straight Edge
  • Card-stock or Scrapbook Paper Sheet
  • Sharpie or Colored Marker
  • Binder (or D Clip, if linking to a backpack)
  • Page Re-Enforcers, Optional

 

Here’s how to make the DIY Pencil Pouches:

 

 

 

  1. Lay a Ziplock baggie on a clean surface, as flat as possible.
  2. using a straight edge and sharpie, mark two inches off of the bottom of the baggie.
  3. Cut the two inch section off of the baggie and set to the side.
  4. Lay your tape flat on the baggie, and continue to wrap each strip of the baggie; each baggie will use three strips.
  5. Secure the bottom strip together.
  6. If you just want a pencil pouch, you are now done!

 

Here’s how to Turn Pencil Pouches into Student ID Cases:

 

 

  1. Using the piece of cut-off baggie listed above, lay the piece flat and cut it in half.
  2. Using a sheet of card-stock or scrapbook paper, cut a template to fit the baggie half sheet; I used a 3″x3″ sheet.
  3. The cut-out will act as a backing to whatever you will need to place in the pouch, for your Student Id, words of encouragement card, epi-pen instructions, etc.
  4. Place the card in the sleeve and place the sleeve on top of the pouch.
  5. Tape down both sides and the bottom section of the sleeve, leaving the top sleeve of the envelope open for the pouch.
  6. You’re done!

 

Also note, you can hole punch your pouch, and then add a D-Clip to the pouch, if adding it to a backpack!

Here’s how to make the In-Binder Supply Pouch:

 

 

  1. Using the instructions for the Pencil Pouch and the Student ID instructions above, make a pouch using a gallon-sized baggie.
  2. When adding a sheet envelope to the top of the pouch, aim for a 4″x4″ rectangle to the pouch; this envelope can house your student schedule or emergency contact information.
  3. When your pouch is completed, using a three-ring hole punch, punch your pouch to accommodate its use in a three-ring binder.
  4. You’re done!

July 2014 Review

Every information card has either the ingredients for each item or refers you to the individual packaging.

The information card also indicates how quickly you should eat each item. This was helpful! We received this box while we were on vacation so we made sure to eat all the eat right away things right away!

The Orange Glad Sweet Box was nestled inside the larger box, this month was totally adorable. I died. I hope they continue the wrapping, I just loved it. Each month the packaging gets nicer and nicer, and I really enjoy it!

The Goodies

Chocolate Maven Hazelnut Cheesecake Brownie – I had an edge piece, so it wasn’t that great. My husband’s half wasn’t the edge piece and his was much better. They shouldn’t pack edge pieces.

Orange Glad Ice-Dream Sandwich – Orange Glad’s first house creation (sugar cookies & frosting). It wasn’t as good as I wanted it to be. I had hoped for mind blowing lemon flavor and it was more like cookies.

Gianna’s Homemade Baked Goods Freedom Star Sugar Cookies – I admit, I saved these adorable cookies for my kids!

Seattle’s Favorite Gourmet Cookies and Dessert Co. Cranberry Muffin Top – My husband’s eyes fell out of his head at this one (it’s really big). And it was delicious! Totally scrumptious and soft!

Lily’s Bakery Shop Chocolate Babka – This was definitely my favorite item!

Montubox Subscription Review!

 

Hello again, savvy savers! Today finds us with another awesome Subscription Box Review! This time I will be reviewing the July 2014 Montubox; this box was It’s A Small World Themed!

This box contains several fun, thought-provoking  , culturally minded learning toys sure to interest even the pickiest of children!

My box came is a very crisp white box, with primary colored trim. Inside the box was world map-printed tissue paper, along with a guide to both the service and activities within the subscription box.

The box contained a Flags Of The World Sticker Box, World Map Soccer Ball, 3-D Statue of Liberty Puzzle, and Statue of Liberty Grow-a-pet. This box was so interesting and my family could not wait to dig into the box and start playing with all of the layers of toys; what’s really awesome is that the box came the day the World Cup started, so the family could use the map and ball to see what the flag of each country looked liked as the various teams played over the past two weeks.

The box also contained a map and stickers which correlated to the difference eco-zones on the map, and that was an awesome family evening of correlating animal, temperature, geographic zone activities! Easter Projects: Fossilized Eggs!

Calling all parents! For the last installment of my Easter Projects and recipe Series, I wanted to share with you a fun project we do most years! We make fossilized Easter Eggs! We do this by hard boiling eggs, for 10 minutes, removing the eggs when they have began to show signs that the egg shells are cracking. We then pour a mixture of one packet Kool Aid, or 4 tablespoons, mixed with 1 cup warm water, then pour the mixture over the eggs! Let your eggs soak for 10 minutes, then carefully remove the egg shells, and voila fossilized eggs! These eggs make create awesome breakfast items for Easter morning, and are always a favorite in my home!

Peeps Fruit Kabobs!

Good evening, savvy savers! I wanted to share another tip with you tonight, as part of my Easter Projects and recipes Series, this time my Peeps Fruit Kabobs! I just love this idea! I use lemonade and watermelon flavored peeps, along with cut kiwi, strawberries, tangelos, and wooden barbeque skewers to make a snack that’s as fun as can be! This has always been one of my go-to Easter treats, especially while dying eggs! This idea is customizable, and easy to make up to a day ahead! If you also want an extra treat, try drizzling chocolate sauce over the fruit as well!
