I like to form mine into little 1-inch balls, but feel free to portion out whatever size you’d like to enjoy for breakfast, dessert, or an extra boost of energy before a workout. My friends and I all love them, and I’m pretty sure you will too!

To make this recipe, simply combine all ingredients together in a food processor and pulse until combined. Cover mixture and transfer to the refrigerator, and let cool for about 30-60 minutes. This will slightly harden the mixture and make it easier to form into balls.

When the mixture is cool, remove and roll into balls of your desired size. Mine were about 1-inch in diameter. Enjoy immediately, or refrigerate in a covered container for up to a month.

A delicious, creamy, nutrient-packed energy bite that's as fun to make as to snack on!

Ingredients

  • 1 1/2 cups old-fashioned oats
  • 2/3 cup Once Again Amore Chocolate Nut Butter
  • 1/2 cup organic unsweetened shredded coconut
  • 1/2 cup agave
  • 1/2 cup roasted walnuts
  • 2 Tablespoon ground peanut butter

1. Eat your frogs early.

One way I maintain a healthier lifestyle at home is by consistently waking up early each morning. I wake up daily at 5 am. I then set out to eat my frogs early, and by this I mean, start performing the tasks I don’t necessarily enjoy doing but must get done. Including getting into a treadmill routine each morning before 6 am. This allows me to get my last favorite activity done quickly and allows me to get on with my day. Then, by having this task done, I feel more accomplished, am in a better mood, and have a better framework to start off my day. All because I eat my frogs early.

2. Meal plan weekly.

At the start of each month, I sit down and work out a monthly meal plan and working shopping list. This helps me to eat better meals, have consistency in our portions, and to only stock our home with an easy-to-prepare plant-based meal at home. This also allows us to save quite a bit of money at the store. As instead of picking up meals on-the-go, we can have planned, prepped meals ready to make. Meals my family looks forward to eating each week.

Because by consistently meal planning, I am able to eat better meals at home but also meals featuring fresh and locally sourced products that are often more zero-waste too! 4. Give yourself grace.

Even with the best of meal planning and meal prep standards in place, slip-ups happen. Because life gets busy. Which is why I also sometimes grab just a cup of Lindsay Snack and Go! Do you sometimes feel like you just don’t have enough time in the day? When someone asks how you are, is your answer always, I’m busy with work?

Too many of us are feeling overwhelmed. Especially women. Particularly mothers. Times dedicated to wandering, exploring, playing and checking out the world have taken a back burner to the pressures and stresses of everyday life.

Just keeping up with the frantic pace of businesses, piano lessons, school activities, and organized sports leave many women barely able to come up for air some days. We are often left feeling scattered and exhausted. To put it plainly, the pace of our cultural business leaves us feeling empty.

Thankfully, as women, we do have an outlet. We don’t have to buy into this hectic pace. Instead, we can take the intentional path of slowing down. We can choose to simplify our schedules, and through doing so can enrich and enhance not only our health and well-being – but that of your kid’s and spouses, too.

We can cultivate a mindset that reduces stress, anxiety, worry, and distraction.

How is this done? Through mindfulness.

While life may be busy, it doesn’t have to feel crazy and cluttered. By creating a mindful lifestyle we allow ourselves to not only begin the process of slowing down and learning but savoring those moments of pause in our lives. Beyond this, science has also proven that those who lead less complicated lives live longer, score higher on aptitude tests, and have lower instances of anxiety-induced illness.

With these truths in mind, and as we are all currently in the season of thankfulness, I’d like to share with you today ten tips for bringing more mindfulness to your current season of life:

When walking, just walk. When sitting, just sit. This is mindfulness of the present moment. While easier said than done, with practice and a heaping teaspoon of self-compassion, you can start to savor the life you have, right as you are now. The fruits of this effort can be life-changing. Give yourself grace. Sometimes it requires effort to let go of the busyness and just walk forward.

Stop living a life of obligation. If a project doesn’t add value to your day, don’t do it. It’s better to schedule activities and events that you can put your whole heart into. Don’t pack your calendar full of things you feel you should be doing. Leave those spaces intentionally vacant for occupation or people who bring meaning to your life. Don’t should all over your perfectly good day.

Stop over-scheduling your kids and yourself. Choose only one thing for everyone to do at a time. Swimming or gymnastics. Civitans or Rotary Club. With only one plate to spin, you can remove the cap of a chauffeur and replace it with something a bit more fashionable, something more tailored to you. Plus, with less to focus on you will appreciate each activity all the more.

We all want to have big, fun, exciting days! But too many jam-packed experiences can leave us feeling drained and unable to truly savor what was so splendid about the days, to begin with. Instead, space out your fun days around practical days. Schedule in several days of calm too.

Why should the little ones have all the fun? When you allow yourself to lavish in the spirit of playfulness you bring about a sense of lightness, curiosity, and wonder to any day. You need and deserve time to play. Find something you love to do today, and do it for yourself. You owe it to your inner child to do so!

Like many others, I have had a tendency to try to squeeze one more thing into my day. Generally, this is at night when I know I do not work and think my best. Don’t do it! It leads to stress and exhaustion. Yes, sometimes we need to do so, but more often than not, it can wait.

I find that I can accomplish more in a day when I only check my email twice daily. I check my email each morning at 9 am and again at 1 pm. I peruse emails while I eat meals and have time to spare in my day to be intentional about answering messages and decluttering files. This allows me to get more done, be more focused, and clear the digital clutter out of my day. I also am intentional about not checking my email at night or first thing in the morning. I find my response levels are not as accurate or professional.

Another tip? Consider using unroll.me, a site which syncs with your email address and allows to you designate the time of day when you will receive your emails. I’ve used this in the past and it worked well for me.

If you truly want to relax, you must start by getting your to-do list out of your mind and onto paper! You have to stop ruminating over your mental list. Write it down. Know that it won’t be lost. Move on.

While this may sound sacrilegious, you need to schedule rest for your week. Give yourself several intentional periods of quiet each day, if only for a few minutes at a time. You need this time to reboot, as rest and relaxation can be truly soothing to the soul. Read that book you’ve yet to finish. Go for a walk to check out the fall foliage. Set the example for your family on what a life well-lived looks like.

The dryer. A source of heat in an already hot home. For me, the quicker I am done with laundry the better I feel about my day. It also goes without saying that in order for my laundry sessions to feel complete, they need to be as low-energy and zero-waste as possible too! I mean sometimes using energy star appliances and eco-friendly detergents just aren’t enough when it comes to the laundry at home. Sometimes you just need a quick DIY to get you further down the road. Which is why I wanted to share with you one of the ways I have found to save on my household laundry bill and that is with making DIY Dryer Balls!

It’s best to start by saying that at least half of my household laundry is air-dried, as this is my preferred method. However as I live in the deep south, and the farther the mercury rises in my thermometer, the longer air drying takes in my area due to humidity, this is always not an option. In comes, our electric dryer! I have found that I can save upwards of half my previous drying times by using dryer balls with each load of laundry at home!

How does this work, you ask? Well, by using dryer balls one can improve your dryer’s efficiency and life span by half,  by reducing the time required for wet clothes to dry. As the dryer spins, these balls tumble between the clothes, maximizing the wet clothes’ contact with the warm air pockets they create. Effectively, dryer balls ‘fluff’ your clothes as they spin, speeding up the drying process and eliminating the need for fabric softening dryer sheets.

Also, as many of you may know, dryer balls are not a new concept. People have been making them for years as an eco-friendly alternative to dryer sheets and liquid fabric softener. Dryer balls work, as they bounce around in the dryer separating clothes, allowing more hot air to circulate through all the garments. As they tumble, the wool balls fluff your laundry, reduce wrinkles, making for softer laundry. They also act as a moisture wick, and pull moisture out of clothes, and will save you up to 1/3 your drying time. Why should this matter? By saving 1/3 of your drying time you will save up to $0.50 per load on your electric bill!  Here’s how to make your own!

Materials:

  • A skein of 100% wool yarn. Not superwash or machine washable varieties. (Here’s my favorite yarn to use)
  • Scissors
  • Pantyhose
  • Crochet hook
  • String or cotton/acrylic yarn
  • Essential oils.

How to make Dryer Balls:

  1. Choosing Your Yarn: Choose skeins of yarn that are 100% wool; stay away from skeins labeled superwash or machine washable,  as these skeins will not felt. You can even cut up wool sweaters, too. Also, you can choose any colors you wish, as felted wool does not bleed into washing or dryer loads.
  2. Create balls: Ball up your yarn, just as you would for knitting, or for a cat ball. Balls should be the size of a tennis fall; aim for 4″ balls.  Repeat this step until you have 4-6 balls.
  3. Tucking: Use a blunt-tipped yarn needle or crochet hook to tuck the end of the thread under several layers of yarn. Pull it through and cut the end.
  4. Prepping: Cut the leg off an old pair of pantyhose. Put balls into the toe of the pantyhose, tying tightly in between each ball with string, or cotton/acrylic yarn; make sure not to use wool yarn or it will felt around the pantyhose. Tie off the end when you have 4-6 segments. Your segments will look like a caterpillar.
  5. Felting the Dryer Balls:  Throw the entire yarn caterpillar into the wash with towels.
  6. Wash: Wash in a hot wash cycle with a cold water rinse cycle, and then. dry your yarn caterpillar with your laundry using the hottest dryer setting; repeat for three settings. You will know your balls have felted when a finger run across the balls does not create pills.

Now that you have created dryer balls, just toss 2-3 balls in the dryer with your freshly washed clothes, and let them do their work; I add 4-6 drops of essential oil on balls going to the dryer in lieu of fabric softener sheets! For larger loads of clothes, linens, or any load with denim, use at least 4-6 balls to notice a decrease in drying time. For large loads, or any HE super-size washers, 6-8 will be needed. The more balls you use, the more quickly your clothes will dry. I like to store your dryer balls in the dryer between uses or display them in a basket in your laundry room.  Also consider making baskets of dryer balls for college graduates, for housewarming gifts, or for hostess gifts, too!

In the last three months of using my dryer balls, I have noticed that my clothes dry 1.3 faster, and my overall electric bill has decreased by $4.10, on average, per month; this is a projected saving of $36.00 a year!

Recently a friend and I were discussing the rising cost of food. Particularly healthy foods. We both agreed you could spend a king’s ransom to eat healthy for yourself and your family each week compared to buying cheap fast food or pre-packaged junk food.

My friend’s option: People don’t eat well because they just can’t afford it.

Of course, my friend is neither plant-based nor vegan and her shopping list included items like coffee, chicken, eggs, juice, and deli meat. All items that are set to continue going up in price due to a variety of reasons. So for her, a fellow savvy saver, eating well is always a question of economy.

So, why you may ask, are meat and dairy products skyrocketing in cost? For a myriad of reasons including global supply problems, global warming issues including droughts in Brazil and California, diseases on U.S. pig farms, and concerns internationally about workers rights and fair trade efficacy.

While many of us have been hit harder than ever lately with increased grocery store sticker shock, those of you who are still meat-eaters will be the hardest hit.

So what’s a savvy-saver to do? Go plant-based.

Naturally, I used our conversation (with permission) to post a series of prompts and posts on my various social media channels. Including Vegan ideas for saving money at the grocery store.

And of course, I was met with replies like- “I don’t want to give up the flavor,” “My husband would never do it,” “I already buy ethical meats,” or “I need protein daily.” Comments I have grown very used to as a plant-based savings blogger.

To that end, I felt my overall point was being lost in translation. I was posting information not as a social criticism but as a means of commiserating with rising food costs and an alternative view to grocery budget savings at home.

Because according to the USDA, the average American will eat 222.2 pounds (100.8 kilos) of red meat and poultry this year. Couple this with the average price per pound for beef being upwards of $4.00 per pound in the states, this will set back the average American nearly $900.00 in meat costs per person, per year.

With higher costs and lesser quality meats and dairies typically offered in food desserts alone.

A large sum of money considering the number one reason most people say they cannot buy healthy foods is that they cannot afford to do so. When cutting back on high ticket food items, such as the before mentioned, could more than make up the funds needed to eat healthier than the Standard American Diet each day.

In fact, when my family and I first started our debt-free journey eight years ago. Meatless Mondays were a set staple in our weekly meal plans. They helped us save over $700.00 our first savings year alone. So I speak from my own personal experience.

Keep in mind, I’m also a total foodie. Particularly food history. Specifically, American culinary traditions. I love nothing more than a gastronomic-rich view of meals of yesteryear. But I’m also a student of finance.

I know that foods, like electronics, will always burst your budget if you opt to only buy the latest and trendiest items. Including newer versions of foods like bacon, steak, milk, cheese, and eggs. Foods that have always had a history of being expensive. Always have and always will.

After all, it wasn’t until after World War II that most of the western world ate meat and dairy on a regular basis.

With sayings like Sunday Chicken Dinners, Easter Ham, and Christmas Roast, set as public reminders as to the precarious relationship between food costs and budgetary needs. Because those foods were pricey, they were purchased sporadically. Meats, in particular, were holiday investments in our familial cultural food heritage and not everyday food staples.

It wasn’t until the television advertising era of the 1950s that meat and dairy products became seen as common. Food everyone must have on weeknight dinner tables if they were to keep up with the Joneses.

In 1953 the invention of oven-heated tv dinner trays by C.A. Swanson & Sons, lead consumers to change their food consumption beliefs. With weeknight turkey dinners replacing Sunday meals.

During this era that weeknight dinners stopped being held around tables. Americans were trained to believe in the necessitation of daily consumption of meats and dairy consumption at home.

Farm-fresh meats, dairy, and produce staples were replaced with quick, processed, knock-offs of American culinary classics. Food that became served to us via trays consumed in front of the tube or shoved into our cars via bags and boxes at our favorite fast-food establishments.

Meals stopped being comprised of everyday moments and memories. No longer did we thank farmers for our nourishment and veterans for peaceable meals spent at home.

And whenever I hear people ask what happened to the nuclear family in America, I always say: Check your dinner plate.

It was also during this time, that meat production costs skyrocketed and continue to this day. Expenses that total upwards of 1/3 of the average consumer’s food budget in North America. Coupled with the price point of organic meat and dairy products costing upwards of $8.00 per pound. Costs that many families simply cannot afford.

Which is why I vehemently believe that for most people, going without meat and dairy products for 1-2 meals for a month can save you considerable dollars each month on your total grocery bill.

Not because of animal efficacy or because of your health, but because of your budget. You will be surprised at how much money you will save.

In an effort to help you along, here are my favorite tips for saving money by going plant-based at home:

Buy in bulk:

Getting familiar with the bulk food section at your grocery store can save you tons of money each season. There you will find staples and pantry items like rice, beans, oatmeal, lentils, and nutritional yeast at significant savings. What makes this so much better? You’re not paying for the packaging, you’re getting better quality food, you can see exactly what your buying, and doing a solid for the Earth too!

Bulk items, like beans and rice, can help you transform everyday meals like red beans and rice to new levels by substituting meats and oil for better quality beans, rice, and exotic spices. Consider making these meals ahead of time to save time too. Because what pot meal doesn’t taste better the second time around!

Then with the money, you’ll save on meats and dairy, reinvest some of those funds back into a good set of countertop canister or a vintage set of mason jars. Then, in-store, fill these bad boys up. And if your favorite store doesn’t have a bulk section? Try Wal-Mart. While Walley-World may not have a bulk section but they do have insanely cheap 5 lbs bags of everyday staples like rice, quinoa, lentils, and beans.

Competitive shopping:

Remember, when it comes to plant-based eating, not every meal has to be organic or gourmet. Not every item needs to be purchased from Whole Foods. You can find many ingredients to making easy, healthy meals at local grocery chains and larger chains such as Wal-Mart. All for a fraction of the price of fancy organic markets.

Including items such as frozen veggies, canned tomatoes, beans, bags of rice, and spices. Not to mention the produce section where you can find organic potatoes, onions, garlic, and a variety of fresh fruit at much lower price points.

Speaking of produce, remember this phrase: Poorganics. That’s right. Buy produce based on your current budget. If you can only afford healthily, bagged apples and not organic singles. Buy those. Maintain your budget. You’re aiming to buy real food that’s you know, not processed! As plant-based shopping helps you buy better, cheaper produce and create cheaper, healthier meals!

Simplify your meals: 

Maybe it’s me, but many of my meals now are all cooked in a single pot. Boil some pasta, add a bag of frozen veggies, and throw in some sauce. Dinner is served. And if I’m using my Instapot, it’s even quicker. For me, plant-based dinner helps me eat better in a fraction of the time.

The best part? Nearly any family favorite can easily be adapted to be served over rice or noodles and the meat substituted for mushrooms, zucchini, butternut squash, lentils, or tofu. The possibilities are endless.

Seriously, you need Instapot dinners. They will change your life!

Grow your green thumb: 

I don’t know about your neck of the woods – but here in the deep south plants grow pretty easily. And growing your own food is one of the best ways to save money on food cost in the warmer parts of the year.

Considering that a packet of seeds is inexpensive, topsoil and compost are both affordable, and raised beds can be created from heat-treated palettes. The costs of produce production will always be cheaper compared to how much commonly consumed produce is priced in-stores. Including lettuce, peas, and tomatoes.

Root veggies such as potatoes and sweet potatoes can even be grown from the sprouts of produce you may already have on hand. A little wire mesh turned into a cage with shredded fall leaves and dirt, and voila, you have a tower of taters!

Growing your own produce will also help you commune with the Earth. It’s a great way to save money and grow your green thumb too! Cultivate your inner farmer!

Learn to love cooking again:

Cooking, the 4 letter word no one wants to hear. But if you really want to save money you are going to have to learn to cook. And love doing so.

Maybe you slept through home economics or no one taught you. It doesn’t matter. Just start.

Pinterest is your friend. As are your neighbors, co-workers, and online friends. Everyone loves to share family recipes and cooking tips. Just ask!

Those are my 5 tips for why and how plant-based eating can help you save money at home. While I recognize that this dietary choice may not be for everyone, I do hope you would give it a try for a few weeks and see if it could help you save at home too.
